My mum used to make this salad regularly when I was a kid. It is very healthy cucumber salad which goes well as side dish to any BBQ meat.
What makes this cucumber salad so fit is the low fat Greek yogurt which is high in protein and low in calories. And cucumber with garlic makes this salad very healthy.
There are few options how you can “improve” this basic cucumber salad recipe. If you serve salad with fish then adding dill into it is great choice or you can also try version with a mint which makes it more fresh.
If you are looking for a way how to make this cucumber salad more paleo/low carb diet friendly then add splash of olive oil or just use regular Greek yogurt.
Garlic in this cucumber salad recipe is optional but I add it because it gives salad nice garlicky “kick” plus garlic is great for your health and your body.
- 1 Cucumber
- 1 (~150g) Low fat greek yogurt
- 2-3 Garlic cloves
- Salt & pepper
- Shred cucumber with a greater
- Add 1 (~150g) low fat Greek yogurt
- Add 2-3 crushed garlic cloves
- Sprinkle with salt and pepper
- Mix it
- Serve as side dish, enjoy 🙂
