Why I love this low carb bread?
I was absolutely amazed by this low carb bread! I am on low carb/high fat diet for few years and I didn’t had bread for very long time. At first I thought bread would last for at least a week but I just ate it all in 2 days. There are only very few substitutes for bread in low carb diets and I must say this seed bread is one of the best bread alternatives I have found.
Recipe is very simple, bread is made only from nuts, seeds and eggs which means it is full of healthy fats and proteins while it is very low in carbs.
There are no rules and so you can choose any nuts and seeds you want, only thing you need to control is right ratio between nuts/seeds and eggs. I recommend using 1 egg for each cup/100g of nuts and seeds. Also it is better to use more nuts than seeds as it will help keep bread together. Bread will hold if you use only nuts but it may crumble a lot.
You can also substitute 1 egg with 1/3 of cup of olive oil which will make bread more moist and it will add some extra healthy fats.
My 3 favourite combination for low carb bread
As I said before you can use any nuts and seeds you want but here are my 3 favourite combinations:
- 2 cups of mixed nuts (1/2 cup of walnuts, brazil nuts, cashews, pecans) + 4 cups of mixed seeds (1 cup of flax seeds, 1 cup of pumpkin seeds, 2 cups of sunflower seeds)
- 6 cups of mixed seeds (2 cups of flax seeds, pumpkin seeds, sunflower seeds)
- 3 cups of mixed nuts (1 cup of almonds, cashews, pecans) + 3 cups of sunflower seeds
These are my 3 favourite combinations but you can use any other combination of nuts and seeds you want.
Also this low carb bread is very easy to store. Just wrap it in paper towel or put it in paper bag and it will stay fresh for at least one week.
I have only one quick reminder about this low carb bread. Don’t eat too much of the bread at one time if you are not used to eating nuts and seeds as it may lead to digestion problems. It is also very easy to eat like too much of this bread because it tastes so amazing and it is also very compressed.

I really love this bread! It is made only from nuts and seeds and it is full of proteins and healthy fats. It can be used in any low carb diet like paleo or keto diet.
Recipe is very simple! You can use any seeds or nuts you like, I prefer to use twice more seeds than nuts. I have used 1/2 cap of walnuts, Brazil nut, cashews and pecans. And for seeds I have used 1 cup of flax seeds, 1 cup of pumpkin seeds and 2 cups of sunflower seeds.
But as I said, you can use any type and ratio of seeds and nuts you want.
For every cup of seeds or nuts use 1 large egg. I have used 5 eggs and I have also added 1/3 of cup of olive oil as I was missing 1 egg. Olive oil is optional but it helps bread to be more moist.
Now just mix everything.
And move the mixture to non stick cake or meatloaf form. Coat your chosen form with fat or preachment paper so it doesn’t stick during baking. Gently tap and shake your form to spread the mixture.
Bake at 325°F (160°C) for 1 hour. After that let it cool down for at least 1 more hour. When bread is cooled down remove excess fat with paper towel.
I forget to use fat for my baking form so I had to use knife to separate bread from the form.
Cooled bread is ready to eat, enjoy your amazing low carb bread with anything you want. Bread should stay fresh for about week if you will store it in paper bag.
- ½ cup of cashews
- ½ cup of brazil nuts
- ½ cup of walnuts
- ½ cup of pecans
- 1 cup of flax seeds
- 1 cup of pumpkin seeds
- 2 cups of sunflower seeds
- 5 eggs
- ⅓ cup of olive oil
- Pinch of salt
- Mix everything in the bowl
- Move it to cake or meatloaf form that is coated with fat or preachment paper
- Bake at 325°F (160°C) for 1 hour
- Let it rest for 1 more hour
- Eat with anything you want, enjoy
