Everyday Vegetable Soup (No Stock or Broth Required) | Rich & Fresh Vegetable Soup

Ingredients
  • Butter (coconut oil or ghee for paleo diet)
  • Water
  • Salt
  • Pepper
  • a)
  • Celery root
  • Carrots
  • Parsnip
  • Onion
  • Garlic
  • Mushrooms
  • b)
  • Cauliflower
  • Tomatoes
  • Leek
Instructions
  1. Dice all the veggies
  2. Fry slowly a) vegetables in hot butter for 3-5 minutes
  3. Add twice as much water (compared to size of a) veggies)
  4. Bring to boil and cook slowly for 15 minutes with lid on
  5. Add b) vegetables and bring to boil again
  6. Cook with lid on for another 10 minutes
