Easy Scrambled Eggs With Peppers | Delicious Scrambled Eggs, Red Pepper And Tomato Paste Recipe

Ingredients

    1.5lbs/700g of flank steak
    2 red bell peppers
    3 tea spoons of tomato paste
    Olive oil
    Salt
    Pepper
    Sweet paprika
    Cayenne pepper

Instructions

  1. 1. Cut beef into small chunks
  2. 2. Roughly dice red bell peppers
  3. 3. Heat up 1 table spoon of olive oil
  4. 4. Fry beef on high for about 3-5 minutes
  5. 5. Add salt, pepper, cayenne and sweet paprika
  6. 6. Keep stirring until meat is seared from all sides
  7. 7. Move seared beef into the bowl
  8. 8. Reduce heat to medium-high and add diced peppers into pan
  9. 9. Add 3 tea spoons of tomato paste
  10. 10. Mix tomato paste in
  11. 11. Add splash of water
  12. 12. Mix water together with tomato paste and cook it for 1 min
  13. 13. Put beef back into the pan
  14. 14. Add more water (almost fully cover the meat)
  15. 15. Bring to boil and cook on low for 30 minutes with lid on
  16. 16. Remove lid and cook on medium for ~15 minutes until almost all juices are reduced
  17. 17. Serve it over low carb pasta or cauliflower rice and enjoy :-)

It is not coincidence that I've uploaded another scrambled eggs recipe. I've been eating eggs almost everyday for last 3 years and only thing I am changing are the ingredients that I eat together with eggs.

Today I would like to show you combination that I discovered recently, scrambled eggs with red pepper and tomato paste. Frying finely diced red pepper on touch of butter helps release its flavors and tomato paste intensifies it's red color and adds another flavor to the meal.

Sauce in this recipe is made from tomato paste and red bell peppers combined together with sweet paprika and cayenne pepper which adds little bit of heat to the meal.

There is one trick for thickening the sauce without using flour and it is to just reduce the juices for 15 minutes which will greatly intensify the flavors and make the sauce much more thick.

As for the meat choice I have used flank steak which is one more delicate cuts but if you will use some tougher cuts like chuck, shoulder, short rib, shank and other increase cooking time to up to 2 hours.

Don' stress much about cooking times just make sure you are tasting the meat so you will know how well it is cooked, it will be tough from beginning but with increasing cooking time it will be more and more tender.
